Oatmeal Banana Cookies with Chocolate Chips

I had some overripe bananas to use up and I didn’t feel like making banana bread, so I decided to try making cookies instead. What I ended up with was delicious! The kids kept asking for more, so I decided to take some to our neighbor who has been so kind, sharing fresh produce from his garden with us.

Oatmeal Banana Cookies with Chocolate Chips

1 ½ Cups Flour
1 ½ Cups Quick Oats
½ Cup Butter (softened)
1 Cup Sugar
1 Egg
½ tsp. Salt
½ tsp. Baking Soda
1 Tbsp. Cinnamon
2 Large Bananas (mashed)
1 Cup Semi-Sweet Chocolate Chips

First, preheat your oven to 400 degrees. Now, cream your sugar and butter together. Add in the flour, egg, salt, baking soda, cinnamon and bananas. Next, add the oats and the chocolate chips. Place a heaping spoonful on a greased baking sheet (I actually prefer using parchment paper. Bake for 10 minutes or until golden brown.

This makes approximately 35-40 cookies.

If you give this a try, come back and let me know what you think!

  1. Can I omit the bananas? One of my kids doesn't like bananas, even the smell.

    1. If you leave out the bananas it might be a bit dry, so I would recommend substituting 1/2 - 1 cup of applesauce. ( You won't be able to taste the applesauce.)
