Eggplant Parmesan

Eggplant has always been one of those foods that I have shied away from. I have always thought, "Food should not be purple!" However, I have been trying to open myself up to new foods, and actually give things a try before I reject them (Novel idea, right?!)

My husband had the idea to make Eggplant Parmesan, and I am not one to turn down his willingness to cook! I am blessed with having a husband who not only likes to cook, but one who is actually good at it too! I feel so sorry for those women (or men!) whose spouses like to cook, but are terrible at it!


Anywho... on to the recipe!


Ingredients

1 Eggplant
2 Cups Italian Breadcrumbs
4 Eggs
1 Jar of Spaghetti Sauce
2 Cups Mozzarella Cheese
1/2 Cup Parmesan Cheese 
1 Box of Angel Hair Pasta

Preheat your oven to 375 degrees.

Slice your eggplant in 1 inch slices and place to the side. Beat the eggs with 1tsp. Italian Seasoning, 1/2 tsp. of salt, 1/2 tsp. of pepper, and 1 tsp. of garlic. Now take your sliced eggplant and dip each slice in the egg mixture and then in the breadcrumbs.

Place the slices of eggplant on a baking sheet and bake for 8 minutes, and then flip them over and bake for another 8 minutes. While the eggplant is baking, put a thin layer of sauce in the bottom of a baking dish. Once the eggplant is done baking, place each slice side by side in the dish, cover with a thin layer of sauce and top with cheese. Bake for another 10 minutes.

While the eggplant is finishing cooking in the oven, prepare your pasta. When the eggplant is done, place some sauce on your pasta, and add the eggplant on top, and voila! You are done!

Though I was hesitant to try this eggplant, I think it tasted wonderful! If you decide to give it a try, let me know what you think!

  2. I enjoy getting eggplant parmesan at restaurants now and then, but I've never made it. It always seemed a bit intimidating. But this recipe looks simple and delicious! I'll have to try this soon. I've been trying to find hearty vegetarian recipes that my carnivorous BF will like, we'll see!

  8. I've been meaning to make this for years, but like you...I've shied away from it. Preparing new veggies makes me nervous. I HATE wasting food, but this looks so good. We may take the plunge this week.

  9. I am a big eggplant fan. and this recipe looks like a winner to me! Thank you! If you want to try eggplant a different way,. BTW, you can cut a few thick slices, annoint with Teriyaki sauce and stick them under the broiler for a few minutes. Makes a nice Asian-inspired appetizer. Let's hear it for purple food! : )

  11. Ok, so I just last week made some fried eggplant. I have always loved eggplant but been hesitant to try and cook it (my husband is one of those who you can feel sorry for LOL) I fried the eggplant. Basically the same steps as above except fried. I just pinned this because I didn't even know you could bake egg[plant. This sounds easier, and probably a lot less time consuming. Im going to try it and see how it differs in taste and texture.
